Chocolate chia pudding

Chocolate for breakfast anyone?! Don't be fooled this is a great healthy start to the day. I've combined mine here with homemade muesli but kids may prefer it on it's own or with a chopped banana or berries.




Ingredients: (makes about 1 cupful)


250ml plant milk of your choice

3 tbsp chia seeds

1 heaped tbsp raw cacao

1 tbsp maple syrup

1 small pinch sea salt

1/2 avocado (optional - see note) *

Handful of berries, or 1/2 chopped banana


Method:


Combine all your ingredients in a bowl and stir well for about five minutes or so to avoid lumps forming. Transfer your mixture to an air tight container such as a sealable glass jar and refridgerate for at least five hours but preferably over night. You are looking for it to form a gel like consistancy. Serve in a bowl or in a glass jar and top with fruit of your choice, or as I've done here with your favourite muesli.


* You could also add 1/2 avocado to your mixture, this makes it much creamier with the additon of some healthy fats. Mix all the ingredients with a blender to break down the avocado, before putting in your glass sealable jar.


Nutritional note:


Chia seeds are high in fibre and are a good source of plant protein. They also contain omega 3 but in a plant form (ALA), which is hard for the body to convert, so this is limited. They also contain calcium, magnesium, phosphorus and protein, all of which are essential for bone health.
